Reconstructing firmware settings

Posted this question on the new member forum, but maybe will get a quicker response if I post here.
I recently bought a used Rostock Max V2 Extended with E3D V6 hot end, but don't have the configuration.h that was used for the last Repetier firmware update (0.92.2). It looks to me like I should be able to download the latest SeeMeCNC firmware and modify it with the settings I get from the EEPROM display in Repetier Host (attached). Does this seem like a reasonable plan? If so, could someone help me out with the mapping between display values and firmware settings? They don't appear to be exact matches. Also any firmware settings associated with using the V6 would be helpful: the stock firmware seems to expect an old PEEK hot end or new HE280 with probe. I'll run M303 to get appropriate PID parameters.
Also, is there any way to adjust the tension on the EZstruder? After several days of great prints, I'm seeing occasional skipping (and associated under extrusion) that seems to indicate an inadequately tight grip on the filament.
