Changing EEPROM in Octoprint

Starting to have a few problems lately so hopefully someone can chime in as I am still new to everything and searching forums isn't generating much success. I am on stock v3 with RPi installed.

Problem 1 - I tried using the delta calibration with the Octoprint Repetier plugin to adjust EEPROM settings but the nozzle always starts the first layer too close to the platform. The results on the calibration page says it corrects the deviation from .07 to .02. But when I switch back to Matter Control and do a delta calibration everything prints fine (more or less) layers are correctly set down on the bed.

Problem 2 - My EZStruder is starting to do the kickback sound and mostly happens on the first layer. I checked the Bowden tube to the nozzle and no clog, I reset the hobb gear and made sure the filament centers and then I tightened down the set screw with Loctite on it, and heated the nozzle and able to push filament by hand. many suggested printing speeds need to be adjusted and with lower speeds I still get the kickback once in awhile. I'm using Hatchbox White PLA and verified 1.75 mm with a digital caliper and there are no debris on nozzle or ezstruder assemblies.

I was planning to get the Duet Wifi and do many mods that I read on these forums but I worry upgrading too fast without fixing these common issues will get me in a bind. Anyone able to provide assistance please?

I found that the kick back sound from the EZStruder happens on the first layer when the nozzle is to close to the bed. The extruder can not push the full amount of filament required out of the nozzle then. So it starts to slip and kick back.

I find I have to adjust the Max Z height in EEPROM to a different value than calculated by the calibration software. But at least the bed is leveled by it. So I slowly shorten the Z height value until I get a good first layer. Then I remember that value in case I run the calibration once again.
