ok, I gave the printer a needed servicing (belts, motors) and checked the hot end. I did find signs of filament oozing from the hot end. I cleaned that up and then found the hot end was loose. I tightened it in place as best I can and am printing right now. if I still have the issues I'm going to ...

are you running time-lapse or any other functions on OctoPrint?
other that running additional plugings for Octoprint my V3 is pretty stock except for some printed side panels for bringing out the raspi's Ethernet, USB and Video Connectors.

when you say grinding, is the teeth skipping over the filament? So the filament is stuck and the teeth repeatedly grinds until it breaks? oh, that doesn't sound good.
I got one good print last night, no grinding. then started one this morning and it sucked, grinding from the start.
I'll check it when I get home and clean it fully this time and check if the Bowden tube moved
